It seems there has been a revolution in this country. It is not one many have noticed outside of our industry but it is an important one none the less.
Years ago it seemed the big corporations like Pizza Hut and Papa Johns had a strangle hold on the industry. If you wanted a good slice, you had to travel to New York or Chicago to get a quality pie. These national brands had successfully stomped out most of the quality pizza places around the country. When they took control of their respective markets they did what any other monopolized industry leader would do. They raised Prices. Prices for a large 16" pizza went from $7.00 to nearly $12.00 in a little less than a year. Prices kept rising and competition was still dwindling in most market places. In the early 2000's relief came from an unexpected place. The cheese market skyrocketed and drove the price of cheese up to 2.00 per 40 lb. block. This price increase looked to be the final blow to mom and pop pizza places around the country. Luckily for pizza aficionados like me it marked the start of a pizza renaissance in America.
Large pizza chains moved to cheaper cheeses to keep their profit margins in line while still keeping the high price point. This then gave customers a choice. Go spend $12.00 on a large pizza with cheap cheese and subpar ingredients or go have a night out at a local pizza restaurant with quality ingredients and handmade dough for the same price. Pizza places started popping up left and right and I was given no choice but to try them all. I could now choose from pizza made in deck ovens, brick ovens, wood fired ovens even a peculiar place who grilled their pizza.
Pizza night has now transformed from ordering in and sitting in front of a TV, to now being a night out with friends sharing some pitchers of our favorite drink and enjoying the many tastes of one of the most versatile foods ever invented.

Does today's youth have any idea what "The American Dream" is? Sure, they grow up hearing about it...I grew up hearing about it. Will I or the vast majority of Americans ever live the American Dream?Doubtful. In the words of James Adams,
