DoughXpress DMS-18 Manual Pizza Press Economy Dough Press with Swing Arm. An economic manual pizza dough press, perfect for low to medium production volumes (75-100/hr). A fast, simple, mess free (no flour needed) alternative to hand tossing or sheeting your pizza dough. This model is a swing away design with an upper heated platen. 18" dia. platen allows for making variable crust sizes up to 18" diameter, and thickness up to 7/8".
Features include: heated upper platen, digital temperature control to 200 degrees F, heat indicating light that turns off once set temperature is reached, infinite range thickness adjustment up to 7/8", swing arm with pull down handle, on/off switch, appliance white finish. ETL Sanitation & ETL listed.
DoughXpress Pressing Tips: Recommended Times: Warm dough, moderate to high yeast = 2 seconds Cold dough, moderate yeast = 4-6 seconds Cold dough, small amount of yeast = 8 seconds
Recommended Temperature: Warm dough...110 degrees F Cold dough...150 degrees F
Production: (Depends on the desired size of the crust) 9" to 18" = 75-100/hr 7" to 9" = 150-200/hr 6" or under = 300-400/hr
